Not a morning person, or "why my breakfast consists of a sugar free soy mocha..."

I am not a morning person.

If I have not stated this before I must stress this. It's not that I don't like mornings or I am lazy. I simply find it incredibly difficult to wake up in the morning. I've tried going to sleep earlier, setting multiple alarms, buying delicious breakfasts as an incentive to get up but no matter what I do, I will sleep until the latest possible moment because apparently I just really like sleep.
As a result I need to be really organised the night before to avoid any unexpected problems that will push me over into actually being late (which happens far more than I would like).

So, this means that the night before, I pack my food for work and choose my outfit so that I can pretty much just grab and go in the morning, when I do finally drag myself out of bed.
I also tend to eat breakfast at work, which means making sure I have something to have for breakfast. During winter it's usually either oats and tea, or wholemeal English muffin with organic peanut butter, and tea. The muffins, peanut butter tea and soy milk all live at work in the fridge but the oats live at home and require me to soak them the night before so that they're soft enough to microwave the next morning. As I said, this works for winter but Sydney summers don't lend themselves to tea and warm breakfasts so this summer I've had to come up with another option.

Enter the sugar free soy iced mocha.

I actually came across this idea after reading the blog Funeral For My Fat. Sharee's go to breakfast is a an Iced Grande Sugar-free Hazelnut Soy Latte.

Now not only does my budget not stretch to store bought coffee drinks every day but there isn't such an outlet anywhere near my work so I was out of luck. But after getting an adorable Mason Jar from my flatmate for Christmas I decided I could probably make something similar myself in said jar, take it to work and solve all those issues at once creating a cheap, cool and fun breakfast option.
So I stocked up on organic soy milk, instant coffee (I'm not a coffee drinker at all, see above re: tea, so flavour/quality wasn't really an issue) and a sugar free cocoa mix that I came across while researching options.

In my jar I put the coffee and mocha mix and half fill it with boiled water to dissolve everything. Then I add my soy milk and pop it in the fridge overnight, grab it in the morning and when I'm awake enough at work I can drink it at my desk. Delicious, filling and easy as.
